Blanched Shell Peas

Ingredients

1 pound of English Shell Peas

1 handful of mint leaves

3 Tablespoons Olive Oil

Juice of 1 Lemon

1/2 cup Parmesan Cheese

Salt & Pepper, to taste

Directions

Blanch the peas. Let the peas sit in the water for about 10 minutes, or until they’re tender. Drain and rinse with cold water, then spread on a paper towel-lined baking sheet to dry. Let cool completely.

In a serving dish, whisk together olive oil, lemon juice, salt and pepper. Add peas and mint, and stir to coat. Top with grated parmesan cheese.
