Fresh Corn Salsa

Ingredients

3 ears sweet corn

Select your heat level 1-3: use 1,2, or 3 jalapeños (3 if you like it hot!)

2 pints sungolds

1 bunch parsley

1/2 small red onion

Apple cider vinegar (ACV)

Directions

Thinly slice jalapeños, removing ribs and seeds if desired. Finely chop onion and place into bowl with jalapenos. Salt both generously and gently massage with a tablespoon of ACV to mellow the intense flavors [Be careful not to touch your eyes after!]. Halve sungolds and add to bowl of onions and peppers; gently massage. Shuck corn and cut kernels off the cobs, add to the bowl. Finely chop parsley and gently mix into the salsa. Taste and adjust salt and vinegar. Best if left to get to know one another overnight.
