Heirloom Tomato Bruschetta
This dish works as an appetizer, or nearly a complete light meal in itself.
Ingredients
1 loaf crusty bread, sliced and toasted(or broiled in the oven)
4 Large heirloom tomatoes, diced
1/2 cup basil, finely chopped
1/2 cup olive oil
1/2 cup diced cheese (we like Womanchego or Parmesan)
2 tablespoons lemon juice
1 tablespoon dill pickles, diced
6 cloves garlic, minced
salt & pepper to taste
Directions
-Combine all ingredients, except bread, in a bowl. Stir to combine. Can be made ahead and held in the fridge until ready to serve. Spoon over bread and enjoy!
