How to Shop for Rhubarb
Select stalks which are fresh and firm. Rhubarb stalks may be green, red, or a mixture of both colors. Color does not indicate ripeness or readiness, just that plant’s unique colors. Rhubarb stalks are also great tasting at any size, so select whatever sizes you prefer.
How to Store Rhubarb
Rhubarb will keep wonderfully in an airtight container in the refrigerator for about a week. The main goal is to keep the stalks as cold as possible and prevent drying.

How to Freeze Rhubarb- It’s easy!
Freezing rhubarb is a great way to have rhubarb on hand for nearly any rhubarb recipe. With some frozen rhubarb, you’ll be ready when the strawberries arrive to create strawberry rhubarb pie, shortcake, and compote for topping yogurt and ice cream. Frozen rhubarb can also be used to create a unique simple syrup for use in cocktails.
1. Rinse stalks and cut up into 1 inch pieces.
2. Freeze on a cookie sheet until partly frozen. (optional, you can skip this step)
3. Remove from cookie sheet. Store in a freezer bag, or any airtight container
*freezing on a cookie sheet keeps the pieces from sticking together in the bag, allowing you to scoop out just what you need*
