Jenni’s Favorite Garlic Scapes
I love throwing some garlic scapes into the pan for dinner! Variations are endless, and can vary flavors by choosing to finish with cheese, vinaigrettes, toasted sesame oil, and a world of other flavors.
Ingredients
-1 bunch Garlic Scapes
-just a bit of your favorite butter or oil, mild or bold to your taste, coconut oil is especially nice
-1 pound beans, peas, greens, zucchini, etc of your choice
(my favorites are green beans or sugar snap peas)
-Salt to taste
Directions
-chop garlic scapes into 1-2 inch pieces using the bud, but discarding the grassy tips, toss these into a heavy pan with oil over medium low heat, and cook stirring just a bit, don’t let them burn, but a bit of browning here or there is fine
-while scapes are cooking tender, pull stems off your peas or beans, or prep your veggies
-then toss them in and cook just until warm, bright green, and tender but still have a little crunch
-salt to taste
