Kohlrabi Slaw

Tender and crunchy with mild broccoli stem flavor, kohlrabi works great in a slaw.

Ingredients

For the Slaw:

2 large Kohlrabi, peeled & sliced into matchsticks

1 large carrot, peeled & sliced into matchsticks

1 handful of cilantro, chopped

1 handful of parsley, chopped

1 medium apple, sliced into matchsticks

4 scallions, chopped

For the Dressing:

1/4 olive oil

1/4 cup tahini

3 Tablespoons lemon juice

2 teaspoons Dijon mustard

2 teaspoons honey

salt & pepper, to taste

2 Tablespoons ice cold water

Directions

Add all the slaw ingredients into a serving bowl. Stir.

Add all the salad dressing ingredients (except the water) into a mason jar. Add a lid and shake until well combined. Add the cold water. Shake again.

Drizzle the slaw with the dressing. Add salt and pepper to taste.
