Quick Tomato Pesto Dressing

This was one of those happy accidents in the kitchen using the ingredients on hand. My dinner salad was delicious, with the tomato providing the sweetness and a bit of zing, and the basil it’s powerful fragrance. I kept the salt to a minimum and grated the Cabot Sharp Cheddar into the salad. The cheese added richness and salt. Yum. - Jenni

Ingredients

Garlic 1-6 cloves to your taste
4 TBSP Olive Oil or Salad Oil
1/2 large tomato, chopped
2-4 oz Basil roughly chopped
Salt to taste
A salad, summer vegetables, pasta, or sandwich of your choice
Optional: Cheese

Directions

Smash or slice garlic, and gently toast to golden brown in the salad oil, let these cool down. Alternative: Heat garlic and oil in microwave for a few seconds till all warmed through and little bubbles

Using a blender, or immersion blender and wide mouth quart jar, begin to blend basil and tomato. Add in the oil and garlic and blend well.

If it looks too thick, add more tomato or oil as you like. Salt to taste.
