Radish Salsa
No need for tomatoes to enjoy a fresh salsa with fall cilantro. Radish salsa is bright, crisp, fresh, and yum.
Ingredients
-2 bunch Radish, large dice
-2 scallions, or chives, or ramps in season
-1/2 or 1 jalapeno (optional)
-3 TBSP chopped cilantro or more to taste
-2 TBSP lime juice
-1+1/2 TBSP Olive Oil
-1/4 tsp Salt
-1/4 tsp Black Pepper
Variation: Try adding drained and rinsed black beans.
Directions
Mix together, let meld in the fridge for a few minutes, or a few days. Enjoy with tacos, burritos, nachos, or even as a pickle with a salad, sandwich, or wrap.
