Scallion Yogurt Herb Sauce
Perfect with roasted veggies, fish, meat, and makes an excellent salad dressing! Can also be used as a dip, especially if using Greek yogurt.
Ingredients
2 c. plain yogurt or coconut yogurt
2 Tbsp lemon juice
3 scallions, thinly sliced (or 2 Tbsp chives, or Ramp greens when in season)
2 Tbsp chopped cilantro
2 Tbsp chopped mint
2 Tbsp chopped dill
2 Tbsp olive oil
salt and ground pepper to taste
Directions
Combine yogurt, scallion, cilantro,
mint, dill, oil, and lemon juice in a
medium bowl. Season with salt and pepper.
