Sweet Corn & Sungold Salad

Ingredients

-6 ears of corn
-1 pint sungolds, halved
-1/3 cup crumbled feta
-1/2 of a red onion, finely diced
-2 handfuls of basil, thinly sliced
-2 Tbsp of Olive Oil
-Juice of 1 lime
-Salt & Pepper, to taste

Directions

  1. No need to cook the corn! Our corn is tender, sweet and delicious eaten raw. Carefully remove the kernels off of the cob with a knife.

  2. Add all of the ingredients to a medium sized mixing bowl. Stir until combined and serve.
