Bourbon and Maple Syrup Glazed Turnips

Ingredients

-2 LBS Purple top turnips (or a combo of your favorite root veggies), chopped into 1 inch pieces
-1/2 cup maple syrup
-1/4 cup bourbon
-3/4 cup vegetable broth
-2 tablespoons red wine vinegar
-2 tablespoons butter
-salt & pepper, to taste

Directions

Step 1: Heat a small amount of oil over medium high heat in a large skillet. Add your chopped turnips (or other root vegetables, if using). Cook until they begin to brown, about 3 minutes.

Step 2: Add vegetable broth, maple syrup and vinegar to the pan. Season with salt and pepper. Bring it to a boil, then reduce to a simmer. Cover and cook for 10 minutes, until the veggies are tender. Remove the cover. Add in the bourbon and cook for an additional 8-10 minutes, or until the liquid is syrupy. 

Step 3: Remove from the heat. Mix in the butter. Season with salt and pepper.
