Gingered Squash
This is the essential holiday squash dish in my family. Every holiday while winter squash is in season we celebrate with Gingered Squash!

Ingredients
-Winter Squash peeled & cut into roughly 3/4 inch chunks, Butternut works really well
-Butter
-Fresh or Frozen Ginger finely grated
-Salt and Pepper to taste
Directions
Step 1: In heavy frying pan or saute pan, heat 1-3 Tbsp Butter and add squash with at least a couple teaspoons of the grated ginger.
Step 2: Cover and saute on medium low heat, stirring occasionally until squash is fork tender. Adjust heat and add just a bit of water as needed to prevent scorching.
Step 3: Add at least a teaspoon more of the fresh ginger for the last couple minutes of cooking to give more zip. Taste and add more as you like, we like lots of ginger, but easy to adjust to your taste.
Step 4:Cook to your desired texture, can choose anything between silky chunks or uniform soft puree.
Step 5: Salt and pepper to taste
Step 6:Great enjoyed with everything from roasted meats, pepping up a forkful of potatoes, or slathered on a warm roll.
