Garlic Scape Pesto

This pesto is Garlic Scape forward, feel free to double the basil for a more even matchup.

Ingredients

1/4 cup sunflower seeds (walnuts, or seed/nut of your choice)

1 bunch of garlic scapes, coarsely chopped

2 oz basil

Juice & Zest of 1/2 lemon

1/2 cup extra virgin olive oil

1/4 cup grated Parmesan Cheese

Salt & Pepper, to taste

Directions

Combine the scapes, basil, sunflower seeds, lemon juice & zest, salt, and pepper in a food processor. Pulse about 20 times, until combined. Pour in the olive oil slowly while the food processor is running. Next, transfer the pesto to a bowl and stir in the cheese. Store in an air-tight jar in the refrigerator for up to 2 weeks or freeze! Use this pesto on toast, sandwiches, pasta, zoodles, chicken, or use as a salad dressing!
