Snap Pea Pasta Salad

This is a simple pasta salad featuring crunchy snap peas. It can be served as a hot or cold dish. Feel free to swap out different herbs, dressing, and cheese to your liking!

Ingredients

1/2 lb penne or fusili

1/2 lb snap peas

1 bunch of radishes, sliced

1 handful of herbs (dill, mint, basil and cilantro), chopped

4 scallions, chopped

1/4 cup Tait Farm Lemon Vinaigrette, or your favorite dressing

1 clove garlic, chopped

1/4 cup Parmesan or goat cheese

Salt & Pepper, to taste

Directions

Pull strings from snap peas and chop into bite-sized pieces. I like them big so either leave whole or just cut in half.

Cook the pasta according to package directions. During the last minute of cooking, add the snap peas to the pasta water. Drain peas and pasta together.

Add in the radishes, scallions, herbs, garlic. Top with the lemon vinaigrette. Add in the cheese. Toss to coat. Enjoy!
