Kohlrabi Salad

From a long time customer and fellow kohlrabi devotee.

Ingredients

-Kohlrabi, peel, and cut into matchsticks
-1/2 Red onion, sliced very thin
-Handful of raisins or dried cranberries, softened in hot water for 20 minutes
-Handful fresh dill, chervil, or savory
-Salt and Pepper to taste
-1/4-1/2 cup poppyseed salad dressing
-Handful chopped nuts or seeds

-Variations galore: add other veggies, snap peas, shredded cabbage, carrots, broccoli, corn, and switch out the salad dressing flavors

Directions

-Mix veggies, herbs, salt, and pepper, drain fruit and add all to salad bowl. Add dressing, use less than you think you need as it will thin out as it rests in the fridge. Toss well, then let rest in the fridge for at least 20 minutes. Top with nuts/seeds, and Enjoy!
