Roasted Parsnips

Like oven fries, but with all that great parsnip flavor!

Ingredients

-1-2 pounds parsnips, peeled and cut in half lengthwise (or quartered for the big ones), cut shorter as desired
-2-4 Tbsp vegetable oil, toss with parsnips
-Salt to taste
-Garlic minced and Rosemary, or your favorite seasonings

Directions

-Preheat oven to 375F. If your baking other things, anywhere from 350-400F works, just keep an eye on them at 400F since they’ll cook fast!
-Toss Parsnips with vegetable oil, and lay in single layer on sheet pan
-Bake about 15-20 minutes until just barely browning on top, and turn over
-Bake another 10-20 minutes until fork tender
-Sprinkle garlic and rosemary, and bake another 3-5 minutes until garlic just barely toasted. Salt to taste and enjoy!
