Susan's Tabbouleh Salad

“A favorite of Emily’s(former NMF apprentice) and became, by popular demand, our requested contribution to soccer picnics.  It is probably the most frequently requested recipe I have had over the years.  Recipe originally received from Gina Epstein when we were living at Village Square Terrace.”-Susan

Ingredients:

1 c bulger, uncooked
1-1/2 c boiling water
1/4 c light oil(I use olive oil)
¼ c lemon juice
2 tsp salt
1 tsp pepper
½ c chopped parsley
2 Tbsp fresh mint, chopped
1 bunch green onions, tops finely chopped
1/4 c lemon juice (yes this round is for the dressing!)
2 tomatoes, diced, or cherry tomatoes halved
1 cucumber chopped

Directions:

Pour Boiling Water and lemon juice over bulger in a bowl.  Let stand 2 hours.  Drain well and return to bowl.  Add remaining ingredients and mix well.  Chill at least two hours.
