Wrens Hearty Peanut Slaw

Apprentice Wren made this for her household and received rave reviews, including a very empty salad bowl at the end of the evening.

Ingredients for salad

2 NMF “the perfect size” cabbages, sliced super-thin

3 carrots, shredded

a bit of thinly sliced onion

a handful or 2 of raw sunflower seeds

Ingredients for dressing

1/3 cup boiling water, mixed with

1/3 cup peanut butter (smooth or chunky, as you like!)

1 tsp sugar

2-3 cloves minced garlic

2-3 tsp shoyu or tamari

4 tsp vinegar (I use half rice and half apple cider)

Thin with extra hot water (or vinegar) as needed, but a thicker consistency is best since the vegetables will dilute the dressing a good bit.

Toss everything together, and enjoy!

Minced parsley and/or scallions/chives make a lovely and tasty garnish. Add some chopped parsley to the salad mix too if you like.
